These are the only crackers I eat now, because they are full of healthy fats, fiber, and protein. They are so delicious and couldn’t be much easier. No commercial wheat, unhealthy fats, high levels of sodium, and possibly preservatives, artificial colors and the insidious ingredient... "natural flavors."

Gluten-free Fat-free Low Carb Crackers
I’ve linked Amazon products that I would use in the recipe below.
Preheat oven to 275°
35g oat flour – you can buy it or make your own in a food processor or blender.
53g Flax seeds – raw, organic preferred
52g pumpkin seeds - raw, organic preferred
53g hemp hearts - raw, organic preferred
104g chia seeds - raw, organic preferred
1 tsp Himalayan Pink salt or Redmonds sea salt
1T ground psyllium husk
1 1/3 cup filtered water
Mix all the seeds together in small-medium bowl. Add the salt and psyllium husk, stirring very well. This assures the salt and psyllium husk is well distributed.
Stir in the water, breaking up any clumps that appear. Let it sit for 2-3 minutes.
Scoop out onto a parchment-covered baking tray. A half pan, 12”x18” holds one batch perfectly.
Lay another sheet of parchment on top of the wet mix and smooth to 1/8-1/4”. I prefer the thicker option. Be aware they will take longer in the oven to reach “crisp” status.
Bake approx. 2 1/2 hrs at 275° Keep a close eye after 90 minutes as ovens vary. You want the crackers to be golden and pretty moisture-free. They will crisp a bit more as they cool.
Notes: I often make 2 batches at one time (in separate bowls) because I love these so much. May as well maximize my time and oven time to double production. They freeze well too.
You can change it up with the seeds you use, as well as spices. Black sesame, sunflower, poppy seeds etc...
You can also substitute different flours although I coconut flour did not give pleasing results. I threw out the majority of the crackers that were made with coconut flour. If you use wheat flour, they will no longer be gluten free.
