Seri Muka is a traditional two layered dessert from Malaysia and Indonesia. The bottom layer is made from steamed glutinous rice, while the top layer is a green sweet custard made with Pandan juice. This Nyonya kueh is delightfully sweet, and intensely aromatic due to the addition of coconut milk and pandan juice.
INGREDIENTS
Glutinous Rice Layer
500g glutinous rice
300g water
180g thick coconut cream (I use box "Kara")
20g sugar
5g salt
2 pieces pandan leaves
20 dried butterfly blue pea flower (about 2g) + 60g water
Custard Layer
170g pandan juice (From 12 pieces of pandan leaves +250g water)
60g all-purpose flour
20g cornstarch
160g sugar
8g salt
330g thick coconut cream (I use "Kara" box coconut cream)
150g whole eggs (3 medium size eggs)
