Log is a video format that allows you to do more in terms of making adjustments to exposure, colour and contrast when editing, in other words colour grading. Linear video has limitations and raw video, that allows this flexibility, is just massive, but log allows you to have flexibility whilst retaining file sizes like those of linear files. Log doesn't quite have the advantage of raw but still very useful.
Log also gives you more dynamic range which means more detail in the light and dark areas of your video.
