Ingredients:
2 cups cooked rice (best if left overnight in fridge)
1 cup Shiitake mushrooms, sliced
1 carrot, diced
1/2 cup frozen peas, thawed
2 eggs, beaten
2 green onions, sliced
3 tbsp soy sauce
2 tbsp sesame oil or vegetable oil
Instructions:
1. Heat 1 tbsp of oil in a large skillet over medium heat. Add mushrooms and cook until they soften.
2. Add carrots and peas. Cook for another 3 minutes.
3. Push the veggies to the side, add a little more oil if needed, and scramble the eggs on the empty side.
4. Once eggs are mostly cooked, add rice and soy sauce. Stir everything together.
5. Cook for another 3-5 minutes until everything is well combined and hot. Garnish with green onions.
