Andrajos, also known as guiñapos, is a typical dish from the province of Jaén. It's a winter stew that can be enjoyed year-round and can be made with either meat (usually rabbit) or fish. The recipe is quite interesting because, in addition to the traditional stew, it's served with shredded pasta, which is precisely what gives the dish its name. This time, I'll let my sister Tere make the recipe, as she lives in Jaén and prepares it quite often. Plus, hers are delicious. Try making them at home and let me know what you think!
