What you need:
Shortbread base
150g butter
95g sugar
1 egg
30g almond flour
250g flour
a pinch of salt

Crunchy layer

30g thin crispy crepes (crêpe dentelle)

Passion fruit curd
80g passion fruit juice
2g gelatin
12g water
50g sugar
2 eggs
65g butter

Whipped caramelized (roasted) chocolate ganache
240g caramelized chocolate (recipe here -    • Карамелизированный шоколад. Chocolat dulce...  )
160g Cream with at least 30% fat content

Mold: 22 cm culinary ring, height 2 cm.
