Fermented foods are great tools for growing your gut microbiome and Mageu is a simple food that can be prepared in your own home without any previous experience.
In this video, I detail the process we use to make the African fermented porridge called Mageu. I drink mixtures of this daily with or without fruit. My Zulu mom Besta taught me how to make it and my other half wrote a poem about it.
Skip to the end to hear the poem.
The basic recipe is:
1.5 cups of Maize meal
2L of boiling water
1 cup of sugar
Pinch of salt
Time (2-4 days on the counter depending on the temperature of your kitchen)
