I'll show you how to make a perfect sponge cake base, ideal for creating stunning layer cake creations. This baking tutorial covers all the essential steps, ensuring your cake comes out beautifully, making it one of the best easy desserts you can master at home.
🔹 Ingredients: 🔹
4 Eggs (Large)
~50ml Hot Water (approx. 3 tbsp + 1 tsp)
150g Caster Sugar (approx. ¾ cup)
8g Vanilla Sugar (2 tsp) or 1 tsp Vanilla Extract
100g All-purpose Flour (approx. ¾ cup)
100g Corn starch (approx. ¾ cup)
12g Baking Powder (approx. 3 tsp)
A pinch of salt
🔹 Preparation: 🔹
1.) In a bowl, combine 100g (¾ cup) flour, 100g (¾ cup) corn starch, and 12g (3 tsp) baking powder. Mix well so the leavening agent is evenly distributed.
2.) On high-speed beat 4 eggs in a large bowl. While mixing, slowly pour in 50ml (3 tbsp + 1 tsp) of hot water to help the eggs expand and become airy.
3.) Once the eggs are thick and pale, gradually add 150g (¾ cup) caster sugar and 8g (2 tsp) vanilla sugar. Continue whisking until the mixture is a smooth, white cream and add a pinch of salt.
4.) Add the flour mixture in three batches, mixing only until just combined. Be careful not to overmix, as you want to keep the batter light and full of air.
5.) Pour the batter into a 26cm (10-inch) round pan lined with parchment paper. Gently tap the pan on the counter a few times to release any large air bubbles.
6.) Bake in a preheated oven at 170°C (340°F) using top and bottom heat for 30 to 40 minutes. Use a toothpick to check if the center comes out clean.
7.) Let the sponge rest in the pan for 15 minutes before moving it to a wire rack to cool completely. Once cold, trim the top for even layers and enjoy!

Adding hot water while whipping the eggs helps them expand for a much lighter, airier sponge.
Using cornstarch instead of all flour creates the delicate, soft crumb typical of European-style cakes.
Always fold in your dry ingredients in three batches to avoid popping the air bubbles and keeping the cake fluffy.
