In this video, I’ll show you step-by-step how to make burger buns at home — from mixing and kneading the dough to getting that beautiful golden shine. You’ll learn how to make them light and pillowy, just like bakery brioche buns, using simple ingredients and easy techniques.

This recipe makes 4 burger buns.

🔹Ingredients:🔹
22 ml / 1½ tbsp warm milk (~ 45°C / 113°F)
118 ml / ½ cup warm water (~ 45°C / 113°F)
4 g / 1 tsp instant dry yeast
1 egg (L - ~ 50g)
15 g / 1 tbsp sugar
200 g / 1⅔ cups bread flour
22 g / 3 tbsp plain flour
5 g / 1 tsp salt
22 g / 1½ tbsp soften unsalted butter
sesame seeds

🔹Preparation:🔹
1.) In a stand mixer bowl, combine 22 ml (1½ tbsp) warm milk, 118 ml (½ cup) warm water, ½ beaten egg, 15 g (1 tbsp) sugar, and 4 g (1 tsp) dry yeast. Mix until blended.
2.) Add 200 g (1⅔ cups) bread flour and 22 g (3 tbsp) plain flour. Mix until the dough starts to form.
3.) Add 5 g (1 tsp) salt and 22 g (1½ tbsp) soft butter. Mix on medium-low until smooth and elastic.
4.) Knead for 10 minutes until soft and slightly tacky. Avoid adding too much flour.
5.) Place in a lightly oiled bowl, cover, and let rise until doubled in size (about 1 hour).
6.) Gently deflate, divide into 4 pieces, and shape into smooth balls. Place on a parchment-lined tray.
7.) Let rise again for 1 hour. Brush with egg wash, sprinkle sesame seeds if desired, and bake at 200 °C (390 °F) for 14 minutes until golden.
8.) Cool on a wire rack. When pressed, the buns should spring back — perfect for your favourite burgers!
