Mimosa blossoms are wonderful, edible flowers to make simple, syrups, teas, etc. They smell amazing, and they have a beautiful taste, when accompanied by a little citric acid, kind of like strawberries. Today I am making a Mimosa Blossom simple syrup.

FYI, The fresh blossoms and leaves are safe, but DO NOT eat the seed pods.

32 ounces water
32 ounces raw organic cane sugar
2 cups Mimosa blossoms

Let sugar and water dissolve first, turn down to low and add Mimosa blossoms. Let simmer until its your desired thickness. Store in a clean mason jar.

This simple syrup can be used on pancakes and waffles, in teas and margaritas, etc.
