Yucca blossoms are so beautiful! They stand so tall, regal and solitary when they are in full bloom. These lovely flowers are edible. I love to harvest a handful when they are fresh. They have a slight lemony fragrance.

I always make sure to sauté my yucca flowers because of the saponins in them. If you eat to many of the blossoms raw, they can upset your stomach because of the saponins. By sautéing, it releases them.

One of my family’s favorite dishes is Pasta Alla Checca. It’s such a light pasta dish because the tomatoes, onions and herbs are barely cooked. It’s reminiscent of spring time. In staying with the springtime theme, I like to add edible yucca blossoms to this dish. When sautéed yucca flowers have a taste similar to artichoke hearts.
