How to make cola,
The recipe for cola is still a big secret, but this recipe is pretty damn close to get a cola flavoured very refreshing cola like syrup. Bij infusing a neutral oil to carry the citrus flavours into a dark sugar syrup
Ingredients needed
10 gram lemon peel
15 gram orange peel
50 ml lime juice
2 gram kaffir lime leaf
150 ml neutral oil, like grapeseed oil
1.5 gram ground nutmeg
1.5 gram corianderseed
1 tonka bean (optional) if you cannot find one, skip it
5 gram cinnamon stick
1teaspoon and 2 gram of citric acid
0.5 gram of xanthaangom
500 gram dark sugar
500 ml water
Step one make the fragrant oil. Combine the orange- and lemon peel together with the kaffir lime leaves and dry ingredients. Cover with oil
Preheat your oven to 80 degrees Celsius
Put the oil in the oven for 1 hour and let it cool down in the oven for about two hours
For the dark sugar syrup
Combine water and brown sugar boil, this and add 1 teaspoon of citric acid. Let cool down
To emulsify the oil and water we need xanthaangom to avoid separation of water and oil
3 tablespoon of infused fragrant oil
50 ml of lime juice
0.5 gram of xanthaangom
2 gram citric acid
Start with 200 ml of syrup to emulsify the oil into the sugar syrup. Us a blender or stick blender. Than add the rest of the brown sugar syrup.
Enjoy this refreshing syrup with soda water and ice……
