Easy rice with red lentils

My mum would make this #easy #rice with #red #lentils dish called #kitchuri whenever it was a rainy day. This is a filling recipe as the red lentils is has lots of protein. This is also a perfect recipe for vegetarians. I love eating this rice with fried eggplant, eggs, and a tomato salad.

If you have time, soak the rice and lentils for around 20 mins. But if you don’t have time you can skip that step.

Ingredients:
1/2 cup red lentils
1 cup basmati rice
3 cups water
1/2 medium onion, sliced
1 to 1.5 teaspoon salt
1/2 teaspoon turmeric powder
1 teaspoon ginger paste
1 teaspoon garlic paste
2 Indian bay leaves*
1 tablespoon ghee**

*if you can’t find the Indian bayleaf don’t stress, just leave it out
*to make this recipe vegan, replace ghee with a non-dairy butter
