This recipe makes 48 mini zucchini #muffins. It's packed full of vegetables and eggs so it’s really filling.
These mini muffins freezes really well, so it's the perfect make ahead #healthy #snack.
Preheat the oven at 160 degrees celsius (fan forced) or 320 degrees fahrenheit (fan forced). Follow along to the video to see how I made this and tips to get the perfect result.
Ingredients:
6 extra large eggs
3 zucchinis (approx 400g)
2 carrots (approx 200g)
1 medium onion
1 cup tasty or cheddar cheese (approx 200g)
1 cup self-raising flour
1/2 tsp salt + extra 1/4 tsp for sprinkling on the grated zucchinis and onions
1/4 tsp freshly cracked black pepper
Experiment with adding in extra ingredients, for example:
1/4 cup chopped sundried tomatoes
