This 1 minute pumpkin microwave cookie recipe tastes just like fall! Made with pumpkin pie spice and real pumpkin puree, this easy 1 minute pumpkin microwave cookie is the perfect snack or can be easily shared with someone for a quick and easy dessert made in one bowl. This pumpkin cookie is dairy-free and eggless, and quickly baked in the microwave within 1 minute. This pumpkin cookie is a quick cookie recipe and is great if you do not feel like making and baking numerous cookies or having a big mess to clean with many leftover cookies. Make sure to let this 1 minute pumpkin microwave cookie cool for 5 minutes after removing carefully from the microwave since it will be really soft.
Ingredients
1 1/2 tbsp unsalted butter (melted)
1 tbsp light brown sugar
1 tsp granulated sugar
1/2 tsp pumpkin pie spice
dash of ground cloves
1 tsp of pure pumpkin puree
5 tbsp all-purpose flour
1/8 tsp baking soda
1/8 tsp salt
Place on a piece of parchment paper and bake in the microwave for 1 minute.
*Since all microwave wattages are different, if the chocolate chip cookie does not look done, microwave for 5- 10 seconds longer.
