Ingredients:
500g skyr
300g milk 1.5%
200g heavy cream
1 vanilla bean or 15g vanilla extract
30g sweetener
9g gelatine powder
Strawberry glaze will add 40 calories per serving:
Ingredients strawberry glaze:
350g strawberries
1/2 lemon
30g sweetener
optional 1g cornstarch
Put a big bowl into the fridge, you will need it later. Add gelatine to a glass with 50g of water and mix, then set it aside. Half the vanilla bean and scrape out all of the vanilla.
Add cream, milk, vanilla bean, and shell to a pot. Put on the stove to medium heat and let it simmer for 2-3 minutes. Then remove it from the heat, remove the shell, and throw it in the garbage. Add sweetener and the gelatine that should be like a gel now and stir until completely dissolved.
Now take out the bowl from the fridge and add the skyr and the milk and cream mixture. Keep stirring for 1-2 minutes. Then distribute everything into 3-5 glass containers and store in the fridge for up to 1 week.
For the glaze, remove the root from the strawberries and then cut half of them into bite sized pieces. The other half goes into a blender with the juice of half a lemon, sweetener, and cornstarch. Blend on high and then transfer into a pot. use a mash strainer if you want to make it extra smooth.
Put the pot on a stove on medium heat and let it simmer for 1 minute, then add all the cut strawberries and give everything a stir. Now distribute the glaze on top of the cold panna cotta and store it again in the fridge.
This is great as dessert but also as breakfast!
