The refrigerator compressor will only turn off if the refrigerator or freezer compartment reaches the required temperature for shutdown. If you have a double-chamber refrigerator, the motor will turn off when the temperature in the refrigerator compartment reaches at least +4/+5 degrees Celsius, and the evaporator should be completely covered with a light layer of frost. If you notice that the rear wall of the refrigerator compartment isn't completely frozen or there's condensation in the corner, the motor won't turn off because the thermostat mechanism simply won't engage. In most cases, if a two-door refrigerator doesn't turn off, it's not the thermostat that's to blame, but a freon leak or a clogged capillary tube (the tube that injects refrigerant into the freezer evaporator). Basically, there's not enough pressure to reach the refrigerator compartment. To check whether the thermostat is the culprit causing the motor to not turn off or if there's a problem with the cooling system, you should:
1) Completely defrost the refrigerator
2) Turn on the refrigerator and place the thermometer on the middle shelf, without any food
3) Do not open the doors for two hours
4) After two hours, the temperature in the refrigerator compartment should be no higher than +5/+7 degrees Celsius. If this temperature isn't reached, the compressor on the refrigerator won't turn off.
The same applies to single-chamber refrigerators and freezers. Just place the thermometer in the freezer, on the middle shelf. After one hour, the thermometer should read no higher than -10 degrees Celsius. If this temperature isn't reached, the motor won't turn off.
