Vanilla Loaf Cake | Eggless Loaf Cake Recipe
This vanilla loaf cake recipe is eggless and can be made without using a hand or stand mixer. Vanilla loaf cake is great to eat as is or topped with fresh fruit or strawberries and a little whipped cream for a sweet treat. Even though this recipe is eggless, this vanilla loaf cake is still very moist since sour cream is used in this recipe.
Ingredients
12 tbsp unsalted butter
2 cups cake flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup granulated sugar
1/2 cup sour cream
1/2 cup milk (room temperature)
1/2 tsp vanilla extract
Directions
1. Melt diced unsalted butter in the microwave or on the stove set this bowl aside to let it cool. In a large bowl, add cake flour, baking powder, baking soda, salt, and granulated sugar. Whisk these ingredients together until they are combined. In a medium sized bowl, add sour cream, milk, vanilla extract, and the cooled melted butter. Whisk these ingredients together until they are combined.
2. Add the wet ingredients to the dry ingredients and whisk together until the mixture starts to form. Make sure to get any dry ingredients from the bottom and sides of the bowl mixed into the mixture.
3. Grease a 9 by 5 inch loaf pan and add the mixture into the pan. Smooth the mixture out evenly with a spatula making sure it goes to the sides of the pan. Bake in a 350 °F preheated oven for around 40 - 50 minutes or until a toothpick comes out clean.
