Chopped Cilantro to taste
6 oz diced tomatoes
4 crushed garlic cloves
Chipotle Chili Powder
Paprika
Cumin
Cayenne
Salt
Pepper
Vegetable Oil
Instructions:
Steak
Place your cube steaks in the buttermilk and let marinade in the fridge for at least 30 minutes, overnight even better. Combine all purpose flour, salt, pepper and paprika in a mixing bowl. In a separate mixing bowl add bread crumbs. (Optional - Instead of bread crumbs, double dredge in the eggs and flour.) In a separate bowl, mix 2 eggs and a splash of buttermilk until smooth. Once steaks are done marinating, place one steak directly into the flour. Cover completely. Then add to the egg wash and coat completely. Finally, add to the bread crumbs and coat completely.
Heat vegetable oil in a cast iron until heated to 350 degrees. Once at temperature, gently place steaks into oil. Cook each side for 3-5 minutes or until golden brown. Set aside on a rack and let drip dry and cool.
Queso
Heat butter in a medium saucepan. Once melted add onions, garlic, salt, chipotle powder and cayenne. Let cook for 2-3 minutes. Add green chilis and tomatoes. Let cook 3-4 minutes. Add can of evaporated milk and bring to a boil stirring continuously. Once at a boil, add your cheese. Continue to stir until all cheese is melted. Once cheese is melted, turn off heat and stir in cilantro.
Add steaks to your plate and spoon on a generous portion of queso. Get ready to live!
