Let's make some chicken fingers without the day ahead prep time. If you have a craving for some fried chicken but didn't do any prep work the night before, don't worry! I have you covered! Give this simple recipe a try.
Ingredients:
Chicken Breast
1 Egg
All purpose Flour
Milk
Bacon Grease or Lard
Paprika
Chipotle Chili Powder
Garlic Powder
Salt Pepper
Instructions:
Lightly whisk one egg in a mixing bowl. Set aside. In a separate mixing bowl, add flour, salt, pepper, garlic powder, paprika and chipotle chili. Mix together well. Cut your chicken breast into even long pieces. Add cut chicken to mixing bowl with the egg. Mix with hand until chicken is evenly coated. Place one piece of chicken into mixing bowl with the flour. Coat with the chicken completely with the flour mixture. Set aside and repeat until all chicken is coated.
Heat vegetable oil over medium to medium high heat until oil reaches 350 degrees. Carefully place chicken in the oil and cook 3-5 minutes. (If you have thing chicken like I did, 2-3 minutes per side.) Flip if necessary to cook evenly on both sides. Once cooked, remove from heat and set aside. Repeat until all chicken is cooked.
Gravy
Heat bacon grease or lard in large frying pan or cast iron. Add all purpose flour. (About half the amount of grease used) Continuously stir together until all clumps are gone. Add more flour as needed. Let cook for 2-3 minutes. Stir in milk. Stir, stir, stir. If too thick, add some water. If too thin, add some flour. Stir and cook until nice and smooth and consistency is to your liking. Season with salt and pepper.
Put chicken on a plate, gravy in a little bowl and enjoy!
