Fried eggplants with eggs, sour cream, garlic, and herbs are simple to prepare yet very delicious. They resemble mushrooms, especially the next day. They can be served as a standalone dish with slices of bread or with any side dish. It's truly tasty! Cook and savor! 🍆😍

RECIPE

Eggplants - 1 kg
Eggs - 3 pcs.
Onion - 1-2 pcs.
Salt - to taste
Vegetable oil for frying

For the dressing:

Sour cream (15% or 20%) - 250 ml
Parsley or cilantro - to taste
Garlic - 4-5 cloves
Seasoning "Khmeli-suneli" - 1/2 tsp.
Salt, pepper - to taste
