Ranked 7th in @tasteatlas 10 Best Soups in the world, 𝙎𝙞𝙣𝙞𝙜𝙖𝙣𝙜 is a sour soup from the Philippines which consists of tamarind, broth, veggies and pork.
It is usually served as a main accompanied with rice. This dish is also enjoyed at weddings, birthdays and celebrations.
Here’s what you need to make it:
• 500-600g skin on pork belly, cut into 1 inch chunks (you can also use pork collar or ribs)
• 1 red onion, chopped
• 1 tsp whole black peppercorns
• ¼ fish sauce (or to taste)
• 250g daikon radish, cut 1” chunks
• 10pcs string beans, cut 2” length
• 1 tomato, cut into wedges
• 1 green chilli, whole
• 1 eggplant, sliced
• ½ pack Sinigang mix*
• 1 bunch kangkong
• 1 liter water
Method +
1. Blanch pork to remove impurities. Rinse well.
2. Simmer pork, red onion and black peppercorns for 30 minutes.
3. Add fish sauce, daikon, string beans, tomato, chilli and Sinigang mix. Simmer for 30 minutes.
4. Add eggplant and lady’s fingers, simmer for another 15 minutes.
5. Just before serving, stir in kangkong and simmer for 1-2 minutes until it is wilted.
6. Serve piping hot with rice. 😋
If Sinigang mix is not available, you can replace it with 4 tbsps tamarind paste, use chicken stock instead of water, add 3 cloves of garlic (minced) and 200g taro/yam cut into 1” cubes.
