Ingredients:
2 cups fresh violets (petals only)
2 cups water
2 cups sugar
1 tablespoon lemon juice (optional)
Instructions:
Prepare the violets: Gently rinse the violet petals to remove any dirt or insects.
Infuse the violets: Place the violet petals in a medium saucepan. Pour the water over the petals, ensuring they are fully submerged. Cover the saucepan and let it steep for at least 24 hours, or preferably 48 hours, in the refrigerator. This allows the water to absorb the color and aroma of the violets.
Strain the liquid: After steeping, strain the liquid through a fine-mesh sieve or cheesecloth to remove the petals. Squeeze the petals well to extract all the liquid.
Make the syrup: Pour the strained violet liquid into a clean saucepan. Add the sugar and lemon juice (if using).
Simmer the syrup: Heat the mixture over medium heat, stirring constantly, until the sugar is completely dissolved. Bring the syrup to a boil, then reduce the heat and simmer for about 10-15 minutes, or until it thickens to a syrup consistency.
Let it cool: Remove the syrup from the heat and let it cool completely.
Store the syrup: Pour the cooled violet syrup into a sterilized glass jar or bottle. Store in the refrigerator.
Tips:
Use only edible violets to avoid poisoning.
Gather the violets in the morning when they are most fragrant.
Lemon juice helps to preserve the bright color of the syrup.
