Today we're making the greatest version of the Blue Hawaii that you will ever lay eyes on, the Blue Leilani from the Tropical Standard book. (https://amzn.to/432g9Jh). The original Blue Hawaii was created by Harry Owens and named after the popular song from the movie Waikiki Wedding. That movie starred Bing Crosby and the album featured the songs Blue Hawaii and Sweet Leilani, the latter would win the Academy Award for Best Original Song in 1937. The "Blue Leilani" combines the names of those two songs.
Harry Owens first wrote Sweet Leilani in 1934 and while it's often considered a love song, it was written by Owens the day after his daughter Leilani was born and in the movie Bing Crosby is serenading a child. Harry Owens would perform at the Royal Hawaiian with his Royal Hawaiian Orchestra starting in 1934 and was prominently featured in the radio program Hawaii Calls
There are a few advanced techniques to making this one, including the lime punch syrup and the coconut oil-washed gin, but it is all well worth it. The lime punch syrups resemble the historic "Sherbet" recipes which were essentially oleo saccharum + juice.

Blue Leilani
5 drops saline solution (20% salt to 80% water)
½ oz lemon juice (15 ml)
1 ½ oz pineapple juice (45 ml)
1 tsp cane syrup
½ oz lime punch syrup (15 ml)
½ oz Giffard Blue Curaçao (15 ml)
¾ oz Denizen Aged white rum (22.5 ml)
¾ oz Coconut Oil Washed Plymouth Gin (22.5 ml)
Lime Punch Syrup
250 gams of stained lime juice
125 grams lime olesacchaum
250 grams white sugar
3.75 grams malic acid
7.25 grams citric acid
Refrigerate for 24 hours and should last up to 2 weeks.
Lime Oleo Saccharum
We need 125 grams total and this is equal parts
250 grams of lime peel
250 grams sugar
Seal in a vacuum bag for 48 hours
Coconut Oil Washed Gin
250 ml of undefined coconut oil
1 liter of Plymouth Gin
