Tom Collins – Possibly invented in 1876 by Jerry Thomas, named after a hoax which circulated throughout New York earlier in the decade. However, there is more evidence to suggest it was originally called the John Collins and changed when a bartender used Old Tom Gin.

15mls Sugar Syrup
Method: Shake all ingredients with ice and strain over ice into tall glass. Top with Fever-Tree Soda
