2. Cover and refrigerate for at least 1 hour (preferably overnight).

Step 2: Prepare the Rice

1. Wash and soak basmati rice for 30 minutes.

2. Boil water with bay leaves, cloves, cardamom, cinnamon, and star anise. Add salt.

3. Cook the rice until 70-80% done (grain should still have a bite). Drain and set aside.

Step 3: Cook the Chicken

1. Heat oil in a large pan. Add sliced onions and sauté until golden brown. Remove half for garnishing.

2. Add green chilies and ginger-garlic paste; sauté until the raw smell disappears.

3. Add chopped tomatoes and cook until they turn soft.

4. Mix in biryani masala, mint, and coriander leaves. Cook for 1 minute.

5. Add the marinated chicken and cook until tender. Ensure the mixture is thick and not watery.

Step 4: Layer the Biryani

1. In a heavy-bottomed pot, layer half the cooked rice.

2. Add the cooked chicken mixture as the second layer.

3. Layer the remaining rice on top. Sprinkle saffron milk, fried onions, and a drizzle of ghee.

Step 5: Dum Cooking

1. Cover the pot with a tight-fitting lid or seal it with dough to trap the steam.

2. Cook on low heat for 20-25 minutes. Alternatively, place the pot on a tawa (griddle) to prevent direct heat.

3. Turn off the heat and let it rest for 10 minutes before serving.

---

Serving:

Garnish with fried onions, mint leaves, and boiled eggs (optional). Serve hot with raita or salad.

Enjoy your Odisha-style chicken biryani!
