For Marinating the Chicken
500 grams chicken, cut into pieces
1 cup yogurt (curd)
1 tablespoon ginger-garlic paste
1 teaspoon red chili powder
1/2 teaspoon turmeric powder
1 teaspoon garam masala powder
Salt, to taste
1 tablespoon mustard oil
For the Rice
2 cups basmati rice, soaked for 30 minutes
4-5 green cardamom pods
1-2 bay leaves
4-5 cloves
1 small cinnamon stick
1 teaspoon salt
Water, as needed
For the Biryani
3 tablespoons ghee (clarified butter) or oil
2 large onions, thinly sliced
1 large tomato, chopped
2-3 green chilies, slit
A handful of mint leaves, chopped
A handful of coriander leaves, chopped
1/2 teaspoon turmeric powder
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon biryani masala (optional)
Saffron strands soaked in warm milk or 1/4 cup milk (optional)
Instructions
Step 1: Marinate the Chicken
1. In a mixing bowl, add chicken pieces, yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala powder, mustard oil, and salt.
2. Mix everything well and coat the chicken pieces evenly. Cover and marinate for at least 30 minutes or up to 2 hours for best results.
Step 2: Cook the Rice
1. In a large pot, boil water and add green cardamom, bay leaves, cloves, cinnamon, and salt.
2. Add the soaked rice and cook until it's about 70% cooked. (The rice should still be firm and not completely soft).
3. Drain the rice and keep it aside.
Step 3: Prepare the Biryani
1. Heat ghee or oil in a large, deep pan. Add the sliced onions and fry until they turn golden brown.
2. Add chopped tomatoes, green chilies, turmeric powder, cumin powder, and coriander powder. Cook until the tomatoes are soft and the oil starts to separate.
3. Add the marinated chicken and cook on medium heat until the chicken is about 80% cooked and the spices are well-blended.
4. Sprinkle chopped mint leaves and coriander leaves over the chicken.
