2. Prepare the Masala Base:

Make a smooth paste of garlic and ginger with a little water. Keep it aside.

3. Cook the Mutton:

Heat mustard oil in a heavy-bottomed pan until it starts smoking slightly (this removes its raw smell).

Add bay leaves, dry red chilies, and whole spices (cinnamon, cardamom, cloves) to temper.

Add cumin seeds and let them splutter.

4. Sauté the Onions:

Add finely sliced onions and fry until golden brown.

Add the ginger-garlic paste and cook until the raw smell disappears.

5. Add Tomatoes and Spices:

Add chopped tomatoes and cook until they turn mushy and oil starts to separate.

Mix in turmeric powder, coriander powder, red chili powder, and salt. Stir well.

6. Cook the Mutton:

Add the marinated mutton pieces and mix well with the masala.

Cook on medium heat for about 15-20 minutes, stirring occasionally, until the oil separates and the mutton is well coated with the spices.

7. Simmer and Cook:

Add 2 cups of water (or as needed for desired consistency) and bring it to a boil.

Cover and simmer on low heat for 45-60 minutes, stirring occasionally, until the mutton is tender and the gravy thickens.

8. Finish with Garam Masala:

Sprinkle garam masala and mix well. Cook for another 5 minutes.

9. Garnish and Serve:

Garnish with fresh coriander leaves. Serve hot with steamed rice, paratha, or puri.
