Neapolitan Pizza Chiena recipe
Easter Chiena' (Full) Pizza 🐣
28-centimeter round and 10-centimeter high
500 g Manitoba type 0 flour
130 g lard or suet or 40 ml oil
10 g salt
1 egg 50/60 g
200 ml cold water
For the filling:
800 g mixed cured meats
500 g Primo Sale or cow's milk ricotta
pepper to taste
8 fresh whole eggs
To finish:
2 egg yolks
3 teaspoons sugar
a drop of milk
Brush on top
