Muhammara is one of my favourite dips and has had a spike of popularity in the last few years. Skip the step of roasting peppers and use the jarred kind, in my opinion they are just as good. Make sure you drain them (not rinse) very well!
3-4 roasted red bell peppers
2 garlic cloves
¼ cup extra virgin olive oil
2 tbsp lemon juice
2 tbsp pomegranate molasses
1 tsp paprika
½ tsp cumin
1 tsp Aleppo pepper (or red pepper flakes)
1 tsp salt, or to taste
1/4 cup unflavoured bread crumbs
1 cup walnuts, toasted
The small food processor, pulse together the roasted red bell peppers, garlic cloves, olive oil, lemon juice, pomegranate, molasses, paprika, cumin, Aleppo, pepper, salt, and the bread crumbs. Then add the roasted walnuts and give it a few pulses, making sure to not over chop them. Mixture overall should be a bit chunky. Taste and adjust for salt and spices.
