Makloubeh, which translates to literally “upside down” is a beloved dish I grew up eating that’s filled with fried vegetables and chicken either layered within it or roasted chicken pieces are placed on top. My mom always made the latter, especially for presentation when we had company over.
As a busy millennial mom, I don’t have time or the patience to fry vegetables let alone clean up after the frying mess. I opt to roast (and air frying is a great option) my vegetables of choice. Vegetables that’re known to be within Makloubeh are eggplant, cauliflower, carrots, potatoes, and sometimes raw pieces of cut up tomato layered at the very bottom of the pot to help with stickiness.
My favourite part about this meal is that I can prepare the veg in advance, sear the spiced chicken quickly, and I can just layer it all 30 minutes before dinner time with the cleaned spiced rice.
