Pumpkin dough:
3.5 oz /100 g pumpkin puree
3.5 oz /100 g glutinous rice flour plus more as needed
1 tbsp sugar
Filling:
5oz/150 g red bean paste
Coating:
White sesame seeds
Vegetable oil
Air Fryer:
Temperature : 350F/170C
Time: 10 minutes (adjusted based on different machine)
Tips:
When prepping the dough, it is important that adding glutinous rice flour into hot pumpkin puree. This is because the hot pumpkin puree stretches the glutinous dough to expand during the cooking process and offer that chewy texture. Otherwise, the dough will be quite stiff and it may even burst during the cooking process.
Preheat the air fryer before you start cooking.
Oil the air fryer basket and sesame balls before cooking.
Serving & Storge:
Sesame balls are best served when fresh.
You can prepare the sesame balls the night before, freeze them in an air-tight container, and cook directly from frozen the next day.
