Abghoosht, the traditional Persian meat stew is a delicious hearty stew that is made either with lamb or beef. (No it's not made with horse meat! Libby is our beautiful cover model for this video because they were running around enjoying life on the rainy day I made this dish). Packed with fiber, animal and legume proteins such as white beans and garbanzo beans it is a perfect dish for cold rainy days.

Fun history of how one eats this stew comes from the fact of Persian royalty who were missing teeth and could not chew their food well asked their cooks to make a dish that is easy to eat without having to chew it too much. Therefore making digestion of the meat and beans easier. To satisfy their masters wishes, cooks came up with separating this stew into two portions. The Dizzi portion and the liquid sauce portion. The Dizzi portion of this dish made of meat and bean components is mashed before consumption eliminating the need for chewing and soaked bread in the liquid portion was invented. Problem solved.
