Egg in the Hole is a classic comfort food for breakfast. Some people call it Egg in a Basket, Egg in a Nest, Egg with a Hat and apparently there are many, many names for this egg fried in a cutout piece of bread. We were making French Toast recently and thought, "what if you put eggs in it like egg in the hole?" Well, the answer is "why haven't we thought of this before?" It combines the best of both worlds for a crispy on the outside but fluffy on the inside French toast with the bonus of an egg in the middle! Let's be honest, the best part of French toast are the outside edges. And the best part of the classic egg in the hole is the middle part with the egg. Now you can have both of the best parts together! Breakfast nirvana. You can even customize the recipe to have your egg yolk that's nestled inside the creamy French Toast to be well done, medium, or very runny. This recipe uses olive oil and a little butter to get that yummy crisp on the crust and the flavors are so good together. We used a large French loaf fresh from the grocery store but you can really make this with any type of bread you have on hand.
