My favorite way of making and eating corn. Elotes! It’s quick, easy, and perfect for your summer BBQs.
Start by peeling back the leaves and removing the silk. Put the leaves back over the corn and throw them on the grill at 350 degrees for about 25-30 minutes.
For the sauce, equal parts mayo and sour cream, zest form 1 lime, lime juice, and my taco seasoning.
When the corn is done, peel the leaves again, brush on the sauce, add cotija cheese, tajin, cilantro and enjoy!
