Teriyaki chicken pineapple boats. If you’re looking for a fun recipe for the summer, you found it! I got everything from my local @marianosmarket
Split the pineapple in half, scoop out the inside and save it to make the salsa. I added pineapple, red bell pepper, jalapeno, red onion, cilantro, lime juice and my AP rub. Mix it well and set it aside.
I used chicken thighs and marinated them in a teriyaki marinade. They hit the grill over high direct heat, flip every few minutes and brush on some of the reserved marinade at the end. Chop up the chicken and assemble the boats. Rice, chicken, pineapple salsa and sriracha mayo on top.
