I've always had a contentious relationship with Pad Thai. I always crave it but most of the times, when I get it I get disappointed. It might be too sweet or too sour or even too mushy. So I set off on an adventure to make my own. My oh my was that the trick! This recipe, albeit a little tedious with the more elusive ingredients, was so simple to make! If you like pad thai, you'll want to make this. If you hate pad thai, you'll want to make this and change your mind. Enjoy!

Ingredients
1.5 ounces tamarind pulp
3 tablespoons sugar
3 tablespoons fish sauce
2 tablespoons Thai black soy sauce
1 teaspoon Thai sweet soy sauce
1/4 teaspoon white pepper
1 package dried Pad Thai rice noodles
1 pound chicken breast or thighs (thinly sliced)
1 teaspoon Thai thin soy sauce
1 teaspoon cornstarch
1 teaspoon water
1/3 cup dried shrimp crushed
6 cloves garlic
2 large shallots
2 tablespoons preserved Thai salted turnips
2 large eggs
2 cups mung bean sprouts
1 cup Chinese garlic chives
Roasted peanuts
