Corned Beef and Cabbage with a Twist | Cabbage Patties for St. Patrick's Day.
Instead of just plain steamed cabbage, try this tasty cabbage patty recipe with lots of veggies to go with your corned beef brisket. The surprise ingredient is a prepackaged falafel mix that I used as a binder. You could substitute egg and bread crumbs if you don't have falafel mix or don't want to use garbanzo beans (the main ingredient in falafel). Added to the shredded cabbage is sweet red pepper, green onion, parsley and cilantro.
Corned beef gets it's name from the size of the salt kernels that it was traditionally cured in because they were the size of corn kernels. So it's really like saying "salted beef". It was an Irish immigrant dish so the beef cut was usually a tougher cut that was less expensive. The curing process tenderized the tough cuts of meat used to celebrate St. Patrick's Day.
