Creamy (with no cream!) Roasted Tomato🍅 & Basil🌿 Soup
This might be one of the only times that I will turn my oven on and eat something warm during these hot days. Summer tomatoes really make this soup so delicious. It’s so creamy and yet it doesn’t have any cream in it. Everything is made in one pan and no need to stand over a stove — truly a recipe worth saving if you love tomatoes like me😃
1.5 lbs – 2 lbs tomatoes, quartered
1 shallot, quartered
6 garlic cloves
2 tbsp balsamic vinegar
2 stems fresh oregano (or 1 tsp dried oregano)
¼ cup olive oil
¼ tsp sugar
1 tsp black pepper
1 tsp crushed red pepper flakes (or to taste)
1 tsp salt, or to taste
¼ cup fresh basil
1 cup water (or stock)
