Are these the best tacos?
Cheesy tacos with homemade blue corn tortillas. This was a first for me and it was so good!!
I used blue corn masa from @masienda to make the tortillas. Add water, kneed for a few minutes, and press them out using a tortilla press. 30 seconds on each side in the comal and they were ready to go. Turned out super soft, fluffy, and delicious.
For the taco filling, dice up a red bell pepper, yellow onion, and a few strips of bacon. I cooked the bacon down first, one link of chorizo went in next, followed by the diced veggies and about 1lb of diced beef. I seasoned everything with my taco seasoning and added a few chunks of Oaxaca cheese and shredded chihuahua cheese. Cook until everything is nice and melty, pull the grill and enjoy.
These were so cheesy, meaty, and flavorful.
