I have completed my goal of creating a model, from conceptualization, to modeling a low res cage, to sculpting a high res model to bake from, to UVing, to texturing, to rigging, to animation, and all of it done in Blender* - this is a flying animation that loops. I've even gotten him functioning as a playable character in UE4!
Thanks to CGCookie for the free tutorial series that goes over how to make a dragon in Blender. If you'd like to make and animate your own dragon, check out the links below.

*While I did sculpt the high-res model to bake the ambient occlusion / curvature / thickness / normal maps in Blender, I did the actual baking in Marmoset Toolbag 3, and the texturing in Substance Painter. The rendered turntable was also done in Marmoset Toolbag 3.
