Recipe for sliced sea buckthorn marshmallows.
This marshmallow has a reduced sugar content and a wonderful tartness.
In a saucepan:
50 g applesauce
120 g sugar
50 g sea buckthorn puree
50 g water
6 g agar-agar 900 strength
In a mixer bowl:
40 g egg white
40 g sugar
a pinch of citric acid
