Ingredients
250 g wheat or spelt flour
200 g cold butter
1 egg (size 6). L
8 g baking powder
130 g gelling sugar 3:1
100 g yogurt
1 packet Bourbon vanilla sugar
Preparation
1. Combine all dough ingredients in a bowl and knead briefly but vigorously until a creamy, yet relatively firm dough forms.
2. Wrap the dough in plastic wrap and refrigerate until ready to use.
3. Preheat the oven to 200°C (top/bottom heat).
4. Pit the peaches and cut into wedges.
5. Mix the peaches with the rum, vanilla sugar, and sugar and place in a baking dish.
6. Remove the batter from the refrigerator and crumble it over the peaches.
7. Bake the finished peach cobbler for about 30 minutes until golden brown.
8. Serve while still hot with a scoop of vanilla ice cream.
Tip:
The batter for this peach cobbler is also excellent to prepare in advance. One day in the refrigerator? No problem. This way you remain flexible and spontaneous.
