As someone who BBQ’s. Cooking large quantities or “big meats” is something we do all too often. More often than not, we’re stuck with a large amount of leftovers. Once the thrill of conquering said meats is over & the desire for it has waned. What do you do to not let all that hard work, time, money & your BBQ perfection not go to waste?
For me, I refer to this as the BBQ’ers hangover. Sometimes I’ll wait 2 days or more before I have the hankering to eat it again. Other times I’ll vacuum pack it & freeze it to use in a work lunch at a later date when I’m in a pinch. Or along that same line of thought, I’ll use it as an add in or add on to a new dish. For instance, if making brisket or pork butt I’ll “add in”those previously frozen leftovers in Chili but also use them to “add on” to Nachos.
Today I’m using day old smoked beef short rib. But let’s just say I’m less enthusiastic about it as I was the day before. So I need to get creative & make it into something almost completely new!
So let’s make an artisan sandwich of sorts out of it!
