Cinnamon Rolls with Sourdough Starter (Am I doing this right?)

This is my process for making cinnamon rolls with my sourdough starter. My starter is only 8 months old but already produces great flavor. I use a combination of dark rye and unbleached flour to feed it. Here is my process:
Mix 1/4 starter with luke warm water
add some flour - I use 2 1/2 cups for 9 rolls
mix together and let sit 10 minutes
add salt. mix again.
let sit 30 minutes.
1st stretch and pull then let sit 20-30 min. Do 4 times.
roll out dough and put in the filling.
roll up, cut, and put in pan.
cover and let ferment. I let mine sit out all night but you can put in the fridge.
cook 15 minutes first thing in the morning.

I usually start the process late at night. I will cover the rolls at around 11pm then cook at 8am. If its longer than that I will put them in the fridge then take out and let sit for an hour to warm up.
