姜葱鱼片 | Stir Fry Fish with Ginger Spring Onion —— 《记得吃饭- 番外篇》

这次我们要分享的简单美食就是超简单的姜葱鱼片!!!

也算是一道马来西亚美食吧,哈哈。

那这道家常菜炒鱼片煮法其实非常容易上手,而且在家自己煮也绝对没有问题!

当然如果你不想姜味太重的话,就少放姜,改成滑炒鱼片也行。
如果大家觉得一开始的油泡鱼片方法,也可以直接变成炸鱼片也行。

姜葱鱼片 | 简单美味炒鱼片食谱:

鱼肉 (腌制方法)
1. 鱼片(鱼柳部位) – 500g
2. 糖 – 1汤匙
3. 盐 – 1/2汤匙
4. 胡椒粉 – 1汤匙
5. 酱油 – 1汤匙
6. 鸡蛋 – 1颗(只需蛋清)
7. 薯粉 – 1汤匙
8. 麻油 – 1 汤匙


炒 :
1. 青葱 – 最少5跟 (头和尾都需要)
2. 姜 – 最少7小片
3. 绍兴酒 – 1汤匙或者盖
4. 耗油 – 1汤匙

姜葱鱼片煮法小贴士 :
1. 鱼片不要油浸的话,用选择用热水煮熟来代替。
2. 也可将鱼肉沾粉后才油浸
3. 鱼肉可以选择用多利鱼或者珍珠鱼 (dory fish fillet)
4. 油浸鱼片和炒鱼片的技巧就是尽量不要用任何锅铲或筷子来拌炒,因为鱼片会散掉。
5. 鱼片也会容易粘锅,所以建议各位观众学会抛锅,鱼片下到锅后,就要赶快虾耗油和绍兴酒,然后就赶紧抛锅到调味料分布均匀。

For this Episode, we are going to introduce a very easy chinese food recipe, which is Stir fry fish with ginger and spring onion !!!

Its a very traditional chinese fish recipe, that you could easily make at home.

And of course lesser oil while stir frying the fish fillet is totally possible.

For the spring onion recipe, you can apply on different kind of meat, such as chicken and beef, totally same recipe.

With this sliced fish with ginger and spring onion, you could easily impress your mother in law as well. So, let's watch how to cook this stir fry fish.

Ginger spring onion fish fillet recipe or Fish recipe in chinese style:
Fish Fillet (marination)
1. Fish Fillets – 500g
2. Sugar – 1 tablespoon
3. Salt – 0.5 tablespoon
4. White pepper powder – 1 tablespoon
5. Soy sauce – 1 tablespoon
6. Egg – 1 (Egg white only)
7. Tapioca powder – 1 tablespoon
8. Sesame oil – 1 tablespoon


Stir fry for fish recipes chinese style:
1. Spring Onion – At least 5 (White and Green part)
2. Ginger – At least 7 cut pieces
3. Shao Xin Wine / Rice Wine- 1 tablespoon
4. Oyster Sauce – 1 tablespoon

Tips for cooking chinese fish recipe :
1. Could cook the fish in boiled water instead of frying the fish fillets。
2. Could dip in tapioca powder before frying the fish
3. Could use dory fish fillet
4. Toss the pan more while stir frying the fish, instead of using spatula to stir fry which will easily spoil the shape of the fish fillet。
5. Strongly recommend audience to learn how to toss the pan while stir frying the fish and after putting in fish fillets, please add in Shao xin wine and oyster sauce immediately to avoid the fish fillets sticking on the pan.
