The simple buttermilk batter is prepared directly on the baking sheet and topped with fresh apricots. The result is a light, fruity sheet cake that's perfect for summer, for guests, or for afternoon coffee.

Preparation time: 10 minutes plus 30 minutes baking time
For a 40x30cm baking sheet
Ingredients
275g powdered sugar
500g all-purpose flour
4 eggs (large)
300g buttermilk
100g neutral cooking oil (e.g., sunflower oil)
1 packet vanilla sugar
1 packet baking powder
1 pinch of salt
1kg fresh apricots
Instructions
1. Preheat the oven to 175°C (350°F) and line a baking sheet (approx. 40x30cm) with parchment paper.
2. Place all ingredients in a bowl and mix well.
3. Pour the batter onto the baking sheet and smooth the surface.
4. Pit the apricots, cut them in half, and arrange them evenly over the batter.
5. Bake the apricot cake for approximately 30 minutes, or until golden brown.
6. Sprinkle with powdered sugar and enjoy preferably while still warm.
