Blueberry Pound Cake ( Bundt Pan)
*Ingredients:*
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs
1 teaspoon vanilla extract
2 ¾ cups all-purpose flour, divided
½ teaspoon baking powder
½ teaspoon salt
½ cup milk
1 ½ cups fresh or frozen blueberries
*Instructions:*
1. *Preheat Oven:* Preheat your oven to 325°F (165°C).
Grease and flour a 10-inch bundt pan (just before baking I find works best) .
2. *Cream Butter and Sugar:* In a large bowl, cream together the softened butter and sugar until light and fluffy.
3. *Add Eggs and Vanilla:*
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
4. *Prepare Dry Ingredients:*
In a separate bowl, combine 2 ½ cups of the flour, baking powder, and salt.
5. *Combine Wet and Dry:*
Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix just until combined.
6. *Toss Blueberries in Flour:*
In a small bowl, toss the blueberries with the remaining ¼ cup of flour. This helps prevent them from sinking to the bottom of the cake.
7. *Fold in Blueberries:*
Gently fold the blueberries into the batter.
8. *Bake:*
Pour the batter into the prepared bundt pan. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center of the cake comes out clean.
9. *Cool:* Allow the cake to cool in the pan for about 15 minutes, then turn it out onto a wire rack to cool completely.
10. *Serve:* Once cooled, slice and serve. You can dust the cake with powdered sugar for a finishing touch if desired.
