Campbell's soup Meatloaf Recipe (the way my Mom usr to make it)
An Easy meatloaf recipe using Campbell's vegetable soup:
Ingredients:
1 can (10.5 oz) Campbell’s Condensed Vegetable Soup
2 pounds ground beef ( I used lean, and in Canada that is 83 /17 )
1 cup saltine crackers ( Crushed ) or you can use bread crumbs
2 eggs
1 package of onion soup mix
1/4 -1/2 cup milk ( I had a bit more than 2 lb of ground beef so I went with 1/2 cup)
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon summer savoury or dried thyme
-1 tsp garlic powder
1/2 cup ketchup
and for the topping mix below ingredients together:
-1/2 cup ketchup
-1/4 cup brown sugar (lightly packed)
-3 tablespoons vinegar (white or apple cider)
-1/2 tablespoon of mustard (spicy, dejon or regular it doesn’t matter)
Instructions:
1. *Preheat Oven:* Preheat your oven to 325°F (160°C).
2. *Mix Ingredients:*
In a large bowl, combine the ground beef, crushed crackers, eggs, onion soup mix, ketchup, milk, salt, pepper, garlic powder, and summer savoury. 3. *Add Soup:* Add the can of Campbell’s Condensed Vegetable Soup to the mixture. Mix well until all ingredients are thoroughly combined.
4. **Form Loaf:
** Transfer the meat mixture to a loaf pan. Press it down evenly to form a loaf shape.
5. Then I turn the meatloaf out of pan onto parchment lined backing sheet.
6. Form and slap meatloaf a few times to get rid of air pockets for stays together nicely for you.
7.Brush top and sides of meatloaf with 1/3 of Ketchup mixture
6. *Bake:*
Place the loaf pan in the preheated oven and bake for 1 hour and 15 minutes to 1 hour and 30 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 165°F (74°C). Also you will remove meatloaf two times during cooking process to finish brushing the ketchup sauce over top and sided of meatloaf.
7. *Rest and Serve:* Allow the meatloaf to rest for about 10 minutes before slicing and serving.

Mom's Homemade Potato Salad
Mom’s Potato Salad Recipe
Recipe is good for 3-5 lb of potatoes
I used russet for Mom’s recipe
Ingredients:
3-5 lbs potatoes, peeled and washed
Salt (for boiling potatoes)
1 small onion, diced small
1 can of peas and carrots, drained
Salt and pepper (to taste)
6 hard-boiled eggs (4 diced, 2 sliced for garnish)
Paprika (for garnish)
Salad Dressing:
1 cup mayonnaise
1/2 cup sour cream
3 tablespoons vinegar
2 tablespoons sugar
1 tsp paprika
1 tsp celery salt
1/2 tsp old bay seasoning
-1/2 tablespoon mustard
Salt and pepper (to taste)
#### Instructions:
1. *Prepare the Potatoes:*
Peel and wash the potatoes.
Boil them in a large pot of salted water until fork-tender. Drain well. And let cool a few minutes
Mash the potatoes in a large bowl.
2. *The Mix in Vegetables and Eggs:*
Add the diced onion and the drained can of peas and carrots to the mashed potatoes
Season with salt and pepper to taste.
Dice 4 of the hard-boiled eggs and mix them into the potato mixture.
3. *Make the Dressing:* - In a separate bowl, combine the mayonnaise, sour cream, vinegar, sugar, paprika, celery salt, and a pinch of salt and pepper. Mix well.
4. *Combine:*
Pour the dressing over the potato mixture. Mix thoroughly to ensure everything is well coated.
5. *Garnish:* - Top the salad with the remaining 2 hard-boiled eggs, sliced.
Sprinkle with paprika for garnish.
6. *Refrigerate:* - Cover the salad and refrigerate for several hours before serving to allow the flavors to meld and to let the dressing thicken.
