Learn how to make the easiest and most delicious Minas Gerais dish ever: The famous "Vaca Atolada" (Beef Stew) with Ribs and Cassava, cooked in a pressure cooker, which melts in your mouth and is much easier and more delicious than it looks! This country-style food recipe is great for a family lunch and is so succulent and flavorful that everyone will love it!
"Vaca Atolada" is a typical country-style dish made with beef. Its main ingredients are beef ribs and cassava, also known as macaxeira or aipim. It is considered a typical dish of Minas Gerais cuisine.
♥ INGREDIENTS ♥
1 kg beef ribs
2 finely chopped onions
2 peeled and crushed garlic cloves
2 peeled and seeded chopped tomatoes
1 tablespoon vinegar
500ml water
2 tablespoons oil
1 kg cassava (chopped into pieces)
Fresh parsley leaves
♥ IMPORTANT ♥
PRESSURE COOKER: I used a pressure cooker because this meat takes longer to cook. You can use a regular pot, but it will take about 3 hours.
CASSAVA: Only add it after the meat is cooked, or it will fall apart.
IMPORTANT: When cooking the ribs, they have a white film; this is normal. After cooking, just remove it and it's ready!
STORAGE: In the refrigerator, consume within 5 days. Frozen, consume within 3 months.
